2nd Fermentation : Natural and constant temperature of 13ºC in the underground caves

Tasting note : It has a pale and delicate pink color. It has a small and persistent bubble with a fine rosary of vertical detachment, marking a very good crown. Intense and clean aging aroma on mothers and fruity background, reminiscent of the fruits of the forest, with a great complexity of aroma. Gluttonous, harmonious, complex and elegant, resulting very attractive and with a wide retronasal route.
Pairing : Aperitif, Starters, melon with ham and appetizers, fatty sausages with tomato bread, cod with pisto or duck breast with blueberry jam. Bitter dark chocolate dessert.
