2nd Fermentation : Natural and constant temperature of 13ºC in the underground caves.
Tasting Notes : Bright straw yellow color. Abundant bubble very small and persistent, with regular detachment. Good crown and perlage. Aromas with fruity background and floral notes, reminiscent of fresh apples and almond blossom.
In the mouth it is very balanced, intense in flavors and round, with moderate acidity and good persistence. Well structured, dry, tasty and smooth, with a long and elegant finish. Wide, powerful and complex retro nasal passage.
