Blend : 50% Macabeo, 35% Xarel·lo, 15% Chardonnay.
1st Fermentation : 13ºC in stainless steel tanks.
2nd Fermentation : Natural and constant temperature of 13ºC in the underground cellars.
Tasting Note
Color: Pale gold color, with turquoise hues. Very fine and persistent foam, with small pearls that rise continuously, forming a perfect rosary that culminates with a good formation of creamy foam around the contour.
Nose : Aroma, during its extensive aging in bottle, has acquired tones of roasting, which are noticeable at first and evolve towards fruity notes reminiscent of vineyard peaches.
Mouth : Taste, its complexity and good balance, are noticeable on the palate. Soft, gentle, creamy, they are sensations that describe its elegance and fullness. Notes of candied fruit and a fresh hint of passion fruit can be guessed. The aftertaste is very long and elegant, with predominantly roasted notes and a very discreet spicy touch.
Pairing : You can perfectly accompany a lunch from start to finish. Excellent appetizer, preferably salty puff pastry, filled with cheese or anchovies, with caviar canapés, smoked salmon, or mi-cooked foie gras. Very elaborate dishes based on white fish, pheasant, ostrich and marinated red meats. Desserts based on bitter chocolate and candied fruits, or with cakes or not very sweet soufflés.
Limited and numbered reserve with 75 cl bottles.
