Blend : 20% Chardonnay, 40% Parellada and 40% Xarel·lo
Serving temperature : 5ºC to 7ºC
Organoleptic characteristics :
- Color : Pale gold, with shades of turquoise
- Foam : Very fine and persistent, small pearls that rise continuously, forming a perfect rosary that culminates in a good formation of a creamy foam around.
- Aroma : During its long aging in the bottle, it has acquired tones of roasting, which are noticeable at first and which evolve into fruity notes reminiscent of vine peach.
- Taste : Its complexity and good balance are noticeable in its passage through the palate. Soft, gentle, creamy, they are sensations that describe its elegance and fullness. Notes of candied fruit and a fresh hint of passion fruit can be guessed. The aftertaste is very long and elegant, with a predominance of roasted notes and a very discreet touch of spices.
Pairing: It is an excellent snack; also to be taken at any time with preferably salted puff pastry, cheese or anchovy fillings, with caviar canapés, smoked salmon, or half-cooked foie gras. It also goes well with elaborate dishes based on white fish, pheasant, ostrich and macerated red meats; with desserts based on bitter chocolate and candied fruit, or with cakes or sweet soufflés. It can perfectly accompany a meal from start to finish
