WINEMAKING
Rovellats cavas are designed for a demanding and select audience, mainly destined for fine restaurants and specialist shops. Production is limited and controlled to guarantee excellence in each bottle. In the winery, innovation is constant: always focused on long ageing, techniques such as inverted ageing in the bottle are applied to refine the large reserves, new materials such as cement and wood are introduced for ageing, own yeasts are reproduced to enhance authenticity and advanced thermal control systems are implemented for the musts.
Quality is an essential part of Rovellats’ philosophy, offering elaborations that combine landscape and sustainability. Rovellats’ long-aged cavas not only convey excellence, as demonstrated by the recognitions received year after year, but also respect for the environment and the importance of the circular economy.
The project also stands out for its social commitment, with constant collaborations with the Pinnae Foundation and the Musicveu Solidarity Festival, and its adherence to Wine in Moderation , promoting responsible consumption and a healthy lifestyle. Rovellats is recognized as a Place of Tourist Interest and is part of initiatives such as Penedès Turisme and La Carretera del Vi.
