HISTORY
Rovellats is located in the neighborhood of Rovellats, s/n, 08731 Sant Martí Sarroca. The name comes from the Latin adjective robiculu (in Catalan, rovell ), due to the location of the estate in a meander of the Foix River, an area with high humidity.
The estate is made up of medieval buildings (10th-15th centuries), with a closed and landscaped enclosure. It already appears in the Catalan Encyclopedia as a small village that existed since the 10th century, and the first written Charter dates from 1303. It is a documented place name since the 14th century.
The original Masia stands out for its typical Catalan entrance, with a 10th-century Romanesque stone arch and a 14th-century Gothic vault. The Chapel, built in an old trull, houses an exact reproduction of the Virgin of Montserrat.
The cava project began at the beginning of the 20th century with Josep Vallès Rovira, who built the underground cellar (12 m deep) with a unique radial architecture. Already in 1929 it won a prize at the Barcelona Exhibition. Despite the interruption during the Civil War, production resumed in 1940, becoming one of the oldest family businesses in the cava sector.
The second generation, Rosa Vallès and Joan Cardona, promoted major technological innovations. Currently, Ma Rosa and Josep Cardona Vallès, the third generation, maintain the local identity, constantly innovating to guarantee the highest quality, with recent investments in tanks, refrigeration and new aging techniques.
This vocation for excellence includes innovations such as the use of our own yeasts, new materials (cement and wood), technical improvements, and inverted aging to refine the great reserves.
